แจ่วฮ้อนคือหม้อน้ำซุปเดือด ๆ แบบอีสาน ลูกค้าลวกเนื้อ ผัก และวุ้นเส้นเองที่โต๊ะ แล้วจิ้มกับแจ่วที่ปรุงไว้ ที่ร้านวิรินทร์เราเสิร์ฟเป็นชุดหมูและเนื้อ ไข่แดงวางบนจานเนื้อ คลุกให้นุ่มก่อนลงหม้อ

We are on Cha Phuban Road in the middle of Mukdahan. A pot of jaew hon comes to your table with sliced pork and beef and a full basket of greens, and there are Vietnamese plates on the side.
Jaew hon is the Isan hot pot: a pot of simmering broth in the middle of the table, where you cook sliced meat, greens and glass noodles yourself and dip them in jaew. Ours comes as a pork and beef set, with an egg yolk on the beef.
The broth is simmered from pork bones and kept plain so the bones come through. Greens arrive by the basket, and there are two dips: a sweet jaew and a bitter one.
Mukdahan is a Mekong town with a taste for Vietnamese food, so duck larb and som tam share the table with Vietnamese salad, fried pork roll and pork satay. Downstairs is air-conditioned; upstairs is open to the breeze.
